INGREDIENTS OF MEDU VADA.

•Washed urad dal – 1 cup

•Salt – as per taste

•Curry leaves – 5 chopped

•Ginger – 1/2 inch chopped

•Green chili – 1-2 chopped

•Whole black pepper – 10 crushed

•Oil – as required

•Cumin powder – 1 tsp

•Preparation time: 3 hours

•Cooking time: 20 minutes

•Total time: 3 hours 20 minutes

~Method:-

STEP 1: Soak the urad dal and grind it in a mixer.

Soak urad dal in water overnight in a large vessel. Due to which the lentils will swell and become soft by morning and after that drain the lentils 2 to 4 times with clean water. Put the dusted lentils in a mixer jar and make a coarse paste by adding a little salt to it. After that put the paste in a big bowl and add cumin powder, crushed black pepper, finely chopped green chilies, ginger paste and chopped curry leaves and mix all the ingredients well with a spoon and mix them well. Make a paste of Use water if needed or else let it be. The paste has to be made soft and hard so that it can come easily by keeping the big one in hand.

STEP 2: Make vadas in a pan.

Now take a large pan and put it on the gas on high flame. Put oil in a pan and heat it. After the oil is hot, reduce the flame. Start making the big ones, first of all, apply a little oil in the hand and run away from the paste and with the help of both the hands, make round balls, thin and big holes and make a big hole in the middle of the big ones like a finger and all the big ones like this. Make a shape and keep it in an oiled plate. Then put them one by one in a big pan and fry till golden brown. Flip the big one in between and deep fry it. When cooked well, take it out from the pan and put it in a plate. Medu is ready.

•If you are not able to make vadas by hand, then pour the paste in an oiled plastic sheet and give it a round shape and make a hole in the middle. Slowly lift the bada from the plastic and deep fry it in a pan.
