Iron- rich crispy tikkis made with bajra and til.

“IRON-RICH CRISPY TIKKIS MADE WITH BAJRA AND TIL.”

•Bajra and Til ki Tikki is one of the most favorite food to be eaten during winters to ward off cold and avoid it. Here both the mixtures not only keep the body warm, but also increase our immunity power.

INGREDIENTS FOR MAKING MILLET TIL TIKKI.

•Water – 1 cup

•Melted jaggery – 1 cup

•Millet flour – 2 cups

•Cardamom powder – 1 tsp

•Refined oil (as required)

•Sesame – 1/2 cup

•Salt (as per taste)

•Preparation time: 5 minutes

•Cooking time: 25 minutes

•Total time: 30 minutes

~Method:-

STEP 1: Make jaggery syrup.

First of all take a pan and keep it on low flame. When the pan is hot enough, put a cup of water and melted jaggery in it, if you do not have melted jaggery, then rub it with a grater. Keep stirring the jaggery in the pan or else it will get thick, so that it does not stick to the pan, keep adding water in between. We have to make jaggery syrup just like sugar syrup but you do not need to check the lace of jaggery syrup in your finger. When the syrup is ready, switch off the gas.

(Note: Do not overuse the quantity of jaggery, it may cause the dough to break apart).

STEP 2: Mix millet(bajra) flour and sesame seeds(til).

Now put millet flour in a large layer and add white sesame seeds to it, mix both well with your hands, you can also use any utensil to mix it. Add oil to the dough for softness. Now add jaggery solution to it and make a dough of all the mixture and keep it for some time.

STEP 3: Make the tikkis.

Put refined or ghee in the pan, heat the refined on high flame. After the refinement is heated, reduce the flame of the gas. Put a little elasticity in the prepared dough and apply refined in your hands so that the dough does not stick in the hand and it is easy to fry. Break the dough into small balls and make it thin like a tikki. Deep fry the tikkis well in the refined ones. Your millet tikki is ready.

Bajra ki tikki can be refrigerated and stored in an airtight container and stored for 15 days.

•Carbohydrates are present in millet which digests the food slowly and you do not feel hungry for a long time. Due to which the weight is controlled.

•Sugar is not found in millet, so it is beneficial for diabetic patients to eat millet.

•Millet controls the level of cholesterol in the body.

•Phosphorus is found in high quantity in millet, which makes bones strong.

•Magnesium is found in high amounts in sesame, which helps in preventing high blood pressure.

•By eating sesame, copper, magnesium and calcium and other nutrients remain in the body for a long time, which provide energy to the body.

~Serving Methods:-

•Serve Bajra ki tikki with jaggery tea or ginger tea.

•Roasting sesame in oil can also be mixed.

•Almonds, cashew nuts, nuts and raisins can also be added.

•Ghee can be used instead of refined, for real taste.

~Change in taste:-

•White and black sesame can be mixed.

•You can also use maida instead of market flour for the crispy test.

•Boora can also be added for sweetness.
