•Gajar ka Halwa is one such Indian dish which is especially liked in the winter season. Which everyone living in India and outside India likes this sweet very much.
•You will see it a lot in the sweet shop on most of the festive occasions. So let’s make this sweet dish made of carrots, sugar, milk and dry fruits, which everyone becomes happy after eating.
•But it takes a lot of time to make Gajar Ka Halwa, when it is made, then the hard work done in making it does not go in vain.
INGREDIENTS OF CARROT HALWA.
•1 kg grated carrot
•20 grams raisins
•2 tbsp ghee
•250 gm Condensed Milk / Ordinary Milk
•25 grams cashew nuts
•2 cups milk
•5 saffron (optional)
for garnish
•1 tbsp pistachios chopped
•Preparation time: 10 minutes
•Cooking time: 4 hours
•Total time: 4 hours 10 minutes

~Method:-
STEP 1: Prepare saffron milk, boil grated carrot in milk.
Put a tablespoon of milk and saffron strands in a small bowl and keep aside. Now mix the milk and carrot together in a pan and bring it to a boil slowly on low flame. Dry roast the dry fruits to make them a little crunchy and add to it.
STEP 2: When the milk dries up, add condensed milk and ghee to it.
After the milk comes to a boil, add saffron flakes (6-10) to it and boil it again till the milk dries up. When the milk dries up, add condensed milk to it and keep stirring in between till the milk also dries up. Then add ghee and cook for 10 more minutes.
•Serve hot garnished with raisins and cashews.

~Know how to make it in the microwave?
•To make Gajar Ka Halwa in the microwave, put carrots and milk in a bowl and microwave it on high for 6 minutes.
•Add ghee and cardamom powder and microwave it for 5 more minutes. Now add sugar and microwave it for 4 minutes. Add khoya and microwave it for 5-6 minutes.
•Check whether the ghee has separated from the edges.
•Otherwise microwave it for another 2-3 minutes. •Serve hot garnished with dry fruits.
~Know how to make it in pressure cooker?
•To make Gajar Ka Halwa in a pressure cooker, put milk and carrots in a pressure cooker.
•Pressure cook on high flame for one whistle and on low flame. Let the pressure release.
•Add ghee and cardamom powder and cook for 3-4 minutes. Add sugar and cook for 3-4 minutes.
•Now add khoya and cook till the ghee starts separating from both the sides. Serve garnished with dry fruits.
~How to make it with condensed milk(milk made)?
•To make gajar ka halwa using condensed milk, simply replace half of it with khoya and use half a cup of condensed milk instead.
•You can also reduce the amount of sugar as condensed milk is a bit sweet.
•You can add 1 cup of milk and skip adding khoya at all. It comes in handy when khoya is not available.
•Make sure to mix the sugar in as condensed milk already contains a lot of sugar.
