•In this season of carrots, let’s make a new dish of Kanji Vada. The combination of mung dal vadas with sour sour kanji is so cool that along with drinking it also satisfies the hunger of the stomach. So let’s make kanji in a sugar jar and take all the nutrients of carrots and make you healthy.
INGREDIENTS OF KANJI VADA.
•Medium carrots – 3•
Water – 5 cups
•Mustard seeds(Rai) – 2 tsp
•Moong dal – 2/3 cup
•Green chili – 2/3 medium
•Refined oil – 2/3 cup
•Asafoetida(hing) – 1 pinch
•Red chili powder – 2/3 tsp
•Black salt – 2/3 tsp
•Garam masala – 2/3 tsp
•Salt – as required
•Preparation time: 10 minutes
•Cooking time: 40 minutes
•Total time: 45 Minutes
~Method:–
STEP 1: Wash and cut carrots.
First of all, take a thick black carrots and wash the carrot thoroughly with water. (Note: Carrots is not to be taken much hard). Then peel the Carrots lightly from above with a knife, after peeling cut the Carrots into long pieces and keep it in a plate.
STEP 2: Make kanji water in a sugar jar.
Now take a clay(mitti) or glass jar and put all the chopped carrots in it. Then add water, salt, mustard, asafoetida(hing), black salt and red chili powder according to the requirement and mix all the mixture well with a spoon. Lift the jar and keep it in a sunny place for about 3 to 4 days and cover the mouth of the jar with a muslin cloth or any ordinary cloth. Stir the water of the jar with a spoon for at least 2 days. After 3 days, taste the water and see if the taste of water is sour and sour, then the kanji is ready to drink.
STEP 3: Add moong and make vadas.
Soak the moong dal overnight in a vessel filled with water and drain it 3 to 4 times with water in the morning and separate the lentils from the water with the help of a sieve. If you are using peeled then rub it well first. Now take a mixer jar and grind the lentils coarsely, if needed, use little water. After grinding the lentils, take out a bowl and add salt, asafoetida(hing), garam masala and green finely chopped chillies and mix all the mixture well with a spoon and make pakoras of all the mixture. Put the vadas in the kanji water. Kanji Vada is ready.
