“MOONG DAL KACHORI LIKE PUFFY CRISPY.”

INGREDIENTS OF MOONG DAL KACHORI.
•Refined flour – 2 cups
•Oil – 1/4 cup
•Moong dal – ½ cup
•Green chili – 2 finely chopped
•Green Coriander – 2 tsp
•Baking Soda – 1/3 tsp
•Coriander Powder – 1 tsp
•Fennel Powder – 1 tsp
•Red chili – 1/4 tsp
•Asafoetida – 1 pinch
•Salt – as per taste
•Garam Masala – 1/4 tsp
•Cumin – ½ tsp
•Preparation time: 10 minutes
•Cooking time: 17 minutes
•Total time: 27 minutes
~Method:-
STEP 1: Soak the moong dal in water.
First of all, soak the washed moong lentils in water overnight and in the morning drain the lentils 3 to 4 times with clean water, put the washed lentils in a mixer jar and grind them finely.
STEP 2: Knead the flour.
Now take a big layer and put sifted flour, salt, baking soda and oil in it and mix all the ingredients well and knead a soft dough by adding little by little water. Keep the dough covered with a plate for 30 minutes and let the dough set.
STEP 3: Roast all the spices in the pan.
Take a pan and put it on the gas on medium flame, put oil in the pan and heat it. After the oil is well heated, add cumin seeds and fry till they turn brown, after that add asafoetida, finely chopped green chilies, coriander powder and fennel powder and fry till the aroma of spices comes. Then put the ground moong dal, salt, red chili powder, garam masala and green coriander and fry the lentils on low flame till it becomes light brown while stirring continuously with the pony. Take out the roasted dal from the pan and put it in a plate and let it cool down.
(Note: If the lentils start sticking to the pan while frying, then pour some oil on top of the pulses).
STEP 4: Make dough balls.
Now that the dough has risen and set, start making small balls of the dough and roll it like a poori on the wheel. Take a poori and put the lentils in the poori with a spoon and close the pithi by pressing it with flour from all four sides, roll the kachori with a light hand twice and keep it thin and keep it in a plate. Similarly make all the kachoris.
STEP 5: Fry the kachoris till they become crisp.
Take another pan and put it on the gas on high flame, put oil in the pan and heat it, when the oil becomes hot enough, then put the kachoris one by one in the pan and fry till it becomes crisp from both the sides. Take out the roasted kachori from the pan and keep it on a plate. Crispy moong dal kachori is ready.
