After the oil is well heated, add cumin seeds and fry till they turn brown, after that add asafoetida, finely chopped green chilies, coriander powder and fennel powder and fry till the aroma of spices comes. (Note: If the lentils start sticking to the pan while frying, then pour some oil on top of the pulses).

Now that the dough has risen and set, start making small balls of the dough and roll it like a poori on the wheel. Take a poori and put the lentils in the poori with a spoon and close the pithi by pressing it with flour from all four sides, roll the kachori with a light hand twice and keep it thin and keep it in a plate. Similarly make all the kachoris.

STEP 5: Fry the kachoris till they become crisp.

Take another pan and put it on the gas on high flame, put oil in the pan and heat it, when the oil becomes hot enough, then put the kachoris one by one in the pan and fry till it becomes crisp from both the sides. Take out the roasted kachori from the pan and keep it on a plate. Crispy moong dal kachori is ready.
