•Green cardamom – 3
•Water – 1½ cups
•Lemon juice – 1-2 drops (optional)
•Khoya – 1/2 cup
•Refined flour – 1/4 cup

•Ghee – 1 tbsp
•Milk – 2-3 tbsp
•Oil – as required
•Preparation time: 20 minutes
•Cooking time: 30 minutes
•Total Time: 50 Minutes
~Method:-
STEP 1: Make sugar syrup by adding water and sugar in a vessel.
To make soft – soft gulab jamun, first of all take a vessel and put the vessel on the gas on high flame. After that put sugar, cardamom and a little water in the pot and let the water boil on high flame. When the water comes to a strong boil, then reduce the flame and add lemon juice to the syrup and mix it well, so that the syrup will not freeze when it cools. Boil the syrup continuously for 7 to 8 minutes on low flame – let it boil and thicken and keep stirring the syrup in between. When the syrup becomes thick after boiling and the sugar dissolves well in the water, then turn off the gas and keep the vessel in one side, let the syrup cool down.
STEP 2: Put refined flour and khoya in a bowl and knead the dough.
Now take a bowl and put sifted flour, ghee, milk, baking soda and grated khoya in the bowl and mix all the ingredients well with hands. After that, kneading all the ingredients gradually, knead a soft and slightly hard dough. If the dough becomes hard while kneading, then add 1 or 2 teaspoons of milk more and make the dough soft. (Note: Do not make the dough too greasy). Now apply some oil in both the hands and take a small portion of the kneaded dough and keeping the palms in the center, lightly make round-round jamuns and make sure that there is a small crack in the prepared jamun. If it is not at all, it may burst the jamuns while frying. Put the prepared jamuns in a plate and likewise make all the jamuns.
STEP 3: Put ghee in the pan and fry the jamuns and put them in the sugar syrup.
Take a pan filled with ghee and keep the pan on high flame and heat it. When the ghee is heated well, then one by one carefully put the jamun in the pan and deep fry it. When the jamuns start to turn brown from the bottom side, then turn the jamuns with a ladle and fry them till they become golden brown, while turning them continuously. Remove the well-fried jamuns from the pan and put them in a bowl of cold and hot syrup and let the jamuns soak in the syrup for about 2 to 3 hours. After 2 hours, the jamuns will have swelled after soaking the syrup well, then take out the jamuns from the pot and put them in a plate. Gulab jammun is ready.
